2 Tbls olive oil
1 lb elk steak – cut into strips
2 c. frozen, mixed veggies (save some time)
½ c. bella mushrooms – quartered
2 cloves garlic – minced
1 Tbls fresh ginger – minced
1 Tbls onion powder
¼ c. rice vinegar
3 Tbls soy sauce
¼ tsp salt
¼ tsp pepper
2 Tbls light brown sugar
1 tsp corn starch
Salt and pepper to taste
¼ c. green onions – diced

On medium heat, coat a large skillet or wok with olive oil, add the elk steak and stir-fry for 3-5 minutes, until cooked to med-rare. In the same pan, add all veggies and stir-fry until veggies are cooked through. Stir in the remaining ingredients, except for the green onions. Let simmer for approximately 15 minutes or, until the sauce thickens. Serve over rice or noodles and garnish with green onions.
